Mayonnaise made with pasteurised eggs are safe, but homemade mayonnaise, or mayonnaise made with unpasteurised eggs (often cheaper brands) should be avoided. This is because it is made with raw egg, which (unless pasteurised) may contain salmonella bacteria.
